There comes a time in every gardner's growing season, when you are desperate to find a new way to use some of the abundant vegetation spilling out of your garden in mass quantities. Tomatoes, squash, cucumbers....and the king of produce proliferation, the zucchini.
Growing up, my siblings and I looked forward to the later days of summer, when the garden was bountiful and mom would inevitably whip up a batch of zucchini patties. Aside from zucchini bread, these little croquettes are the next best way to get kids to eat the green god of the garden. It is my pleasure to share this fantastic recipe with you!
Launa's Zucchini Patties
2 c. grated zucchini (I usually use 2 small or 1 med/large)
3 T. minced fresh onion (I have also used green onions)
3 T. diced red or green pepper (or smaller if you are needing to disguise...)
1-2 cups grated cheddar cheese
1 beaten egg
1 cup approx, Bisquick mix (may need more depending on how wet the batter is)
1 t. salt
pepper to taste
(optional- sometimes I add a dash of Mrs. Dash or no salt seasoning blend)
Mix all ingredients together, making a thick consistency batter. Drop by large gloppy spoonfuls into a heated non-stick pan drizzled with a little vegetable oil. I usually use my fingers to spread the patties out a little bit (yes, it will be gooey). Once the patties are browned on one side, flip and cook until inside is cooked (like a pancake). If desired, season with a little more salt.

My kids love them, and I usually make a whole batch and just reheat them up for snacks the next day. Sam says, "Bon Appetito! These are yummy!"
